JUST SMOKED SALMON ROUNDS

Ingredients
  • 4 ounces cream cheese, room temperature
  • ¼ Cup sour cream
  • 2 teaspoons chopped fresh dill
  • 1 teaspoon grated lemon zest
  • 2 English cucumbers
  • 4 ounces thinly sliced ALDER JUST smoked salmon (lox)
  • Fresh sprigs of dill for garnish
Instructions
  1. In a small bowl, mix together the cream cheese and sour cream until smooth.
  2. Stir in the chopped dill and the grated lemon zest.
  3. Slice the cucumbers into ⅜-inch-thick rounds.
  4. You should have about 40 slices.
  5. Place the rounds on a platter and pat the tops dry with a paper towel.
  6. Place a teaspoonful of the herbed cream cheese on each slice of cucumber.
  7. Top with a small slice or two of smoked salmon and a small sprig of dill.
  8. Place the rounds on a platter and serve.
  9. To prepare ahead: Make up the Cucumber Rounds with Smoked Salmon early on the day of the party.
  10. Store covered in the refrigerator until needed.
  11. Substitution: If you can't find an English cucumber, use a regular cucumber instead.
  12. Handy tip: When storing the rounds, I put toothpicks in a few of them before covering so that the sprigs of dill won't shift all around.
  13. Variation: add minced color varied Bell peppers or capers to the cream cheese...
  14. Hot sauce (small amount) can also be added for a kick, but use only a small amount so it doesn't overwhelm the salmon.
