SMOKED SALMON & MANGO SANDWICHES with BASIL, GOLDEN RAISIN & PINE NUT PESTO

Ingredients
  • 8 thin slices (best quality) bread
  • 8 ounces Alder Smoked Salmon
  • 2 ripe mangos, peeled & sliced thin
  • juice of 1 lime
  • ½ cup (purchased) basil pesto
  • ¼ cup toasted pine nuts, chopped
  • 2 tablespoons (moist) golden raisins
  • 1 teablespoon extra virgin olive oil
  • ½ teaspoon creamed horseradish
  • 1 cup fresh watercress
Instructions
  1. Divide salmon between 4 slices of bread.
  2. Sprinkle mango with lime juice ans place on salmon.
  3. In a small bowl, stir together the basil pesto, pine nuts, raisins, olive oil and horseradish.
  4. Spread on the remaining 4 bread slices and top with watercress.
  5. Put sandwiches together, trim off all crust then cut into triangles.
  6. Yield: 8 pieces
