Adler Smoked Salmon Quesadilla with Chipolte Lime Sauce

Ingredients
- 1 cup Crème Fraiche
- ¼ cup Chipotle Peppers in Adobo, Minced
- ¼ cup lime juice
- ¼ teaspoon Salt
- ¼ teaspoon Black Pepper
- 4 ounces Mascarpone Cheese, softened
- 4 ounces Goat cheese, softened
- 6 Flour tortillas
- 8 ounces Traditional Adler smoked Salmon
- ½ Cup Shallots, minced (3-4)
- ½ Cup Roasted Red Peppers, Chopped
- ¼ Cup Cilantro, Chopped
Instructions
- In a small bowl, mix together Crème Fraiche, Chipotle, lime juice, salt and black pepper.
- In a small bowl, mix together Mascarpone and Goat Cheeses. Spread evenly over tortillas. Top three tortillas with smoked salmon, evenly over cheese. Top with other three tortilla's - cheese side down. (so salmon is sandwiched between cheese)
- Place tortilla's in an oiled 12 inch skillet and cook over medium heat for 1 - 2 minutes and flip. Cook 1 -2 minutes more or until lightly browned and cheese is melted. Serve with sauce and cilantro.
