Alder Planked Dijon Crusted Halibut
 
Ingredients
  • 8 oz halibut fillet
  • 1 cup Dijon mustard
  • ⅛ cup buttermilk
  • 2 tbsp. butter
  • 2 cups bread crumbsSauce Ingredients:
  • 1 tsp. almond extract
  • 1 tsp. coconut extract
  • ½ white sweet onion diced
  • ¼ tsp. crushed bay leaves
  • ¼ tsp. lemon pepper
  • ½ cup mango chutney
  • 2 tsp. half and half
Instructions
  1. Brush alder cooking plank with olive oil, place in oven
  2. and pre-heat to 350 degrees.
  3. Mix Dijon mustard and buttermilk together, set aside.
  4. Heat butter in pan. Roll Halibut in mustard mixture
  5. then coat with breadcrumbs. Seer halibut in pan approximately
  6. minutes per side. Place on heated plank
  7. and bake in oven for 20 mins or until halibut is done.
  8. Sauce directions:
  9. In a pan saute onion, almond and conconut extracts for
  10. -4 minutes. Sprinkle in bay leaves and lemon pepper.
  11. Mix in mango chutney and half-and-half. Reduce sauce
  12. for 2-3 minutes. Remove from heat.
  13. Place baked halibut on serving dish and lightly cover
  14. with sauce. Serve with Baked potato with sour cream
  15. and chives, and a side of asparagus spears.
