Avocado Smoked Salmon Roll-ups

- 2 large ripe avocados
- ½ pound thinly sliced smoked salmon
- 1 lemon
- 3 tablespoons balsamic vinegar
- 3 tablespoons extra-virgin olive oil
- 1 tablespoon fresh lemon juice
- 1 tbsp capers, drained
- Peel and pit the avocados.
- Slice in wedges approximately ½” thick.
- Wrap sliced smoked salmon around each wedge.
- Arrange on 4 salad plates. Whisk together the balsamic vinegar, olive oil, and lemon juice.
- Drizzle over roll-ups.
- Garnish with capers.
