Avocado Smoked Salmon Roll-ups

Ingredients
  • 2 large ripe avocados
  • ½ pound thinly sliced smoked salmon
  • 1 lemon
  • 3 tablespoons balsamic vinegar
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tbsp capers, drained
Instructions
  1. Peel and pit the avocados.
  2. Slice in wedges approximately ½” thick.
  3. Wrap sliced smoked salmon around each wedge.
  4. Arrange on 4 salad plates. Whisk together the balsamic vinegar, olive oil, and lemon juice.
  5. Drizzle over roll-ups.
  6. Garnish with capers.
