Smoked Salmon Scramble
  • 3 eggs
  • 1 teaspoon tarragon
  • 2 oz. traditional Olympic Peninsula Alder Smoked Salmon
  • 1 tablespoon capers
  • Non-stick spray
  • Optional: parmesan cheese, scallions
  1. Beat the three eggs with tarragon.
  2. Separate salmon.
  3. Spray pan with non-stick spray and heat on medium.
  4. Add eggs, salmon, and capers.
  5. Cook as you would scrambled eggs.
  6. If desired Garnish with shredded parmesan cheese or sliced scallions.
  7. Serves two, or one really hungry person.
