Adler Smoked Salmon Quesadilla with Chipolte Lime Sauce

  • 1 cup Crème Fraiche
  • ¼ cup Chipotle Peppers in Adobo, Minced
  • ¼ cup lime juice
  • ¼ teaspoon Salt
  • ¼ teaspoon Black Pepper
  • 4 ounces Mascarpone Cheese, softened
  • 4 ounces Goat cheese, softened
  • 6 Flour tortillas
  • 8 ounces Traditional Adler smoked Salmon
  • ½ Cup Shallots, minced (3-4)
  • ½ Cup Roasted Red Peppers, Chopped
  • ¼ Cup Cilantro, Chopped
  1. In a small bowl, mix together Crème Fraiche, Chipotle, lime juice, salt and black pepper.
  2. In a small bowl, mix together Mascarpone and Goat Cheeses. Spread evenly over tortillas. Top three tortillas with smoked salmon, evenly over cheese. Top with other three tortilla's - cheese side down. (so salmon is sandwiched between cheese)
  3. Place tortilla's in an oiled 12 inch skillet and cook over medium heat for 1 - 2 minutes and flip. Cook 1 -2 minutes more or until lightly browned and cheese is melted. Serve with sauce and cilantro.
