Smoked Salmon in Puff Pastry

Smoked Salmon in Puff Pastry

  • Hash Browns:
  • 1 T. olive oil
  • 1 T. butter
  • 2 c. cubed potatoes with onions and peppers
  • ½ t. salt
  • ½ t. pepper
  • 1 T. butter
  • 6 eggs
  • 1 T. fresh dill chopped
  • ½ t. salt
  • ¼ t. pepper
  • 1 T. orange juice
  • 2 T. cream cheese
  • ½ c. smoked salmon
  • 8 - 5" x 5" pieces of frozen puff pastry- thawed out
  • 1 T. flour
  • 1 egg whisked with 1 Tablespoon of water
  • 1 T. each grated Parmesan and Romano cheese
  1. Melt butter in large frying pan on medium-low heat. Whisk eggs in a bowl
  2. until frothy. Add eggs to pan. Continue stirring, moving the eggs and cook until
  3. eggs are just set, then remove from heat. Add dill, salt, pepper, orange juice,
  4. cream cheese and smoked salmon. Stir mixture gently until all ingredients are
  5. combined.
  6. a.. Combine the egg mixture and the potatoes. Stir gently until
  7. combined. Set aside.
  8. b.. Roll out puff pastry sheet until slightly larger than the original
  9. shape.
  10. c.. Add ½ cup egg and potato mixture to the middle of the pastry
  11. sheet. Fold pastry into a
  12. d.. triangle. Crimp edges of the pastry to close dough.
  13. e.. Put filled pastry on a cookie sheet lined with parchment paper. With
  14. a pastry brush - brush egg wash on top of the closed pastry and sprinkle a pinch
  15. of the cheeses on top.
  16. f.. Preheat oven to 400. Cook pastry for 20 minutes until browned.
  17. Remove from oven and let cool for 5 minutes on a cooling rack. Serve warm.
