SMOKED SALMON & MANGO SANDWICHES with BASIL, GOLDEN RAISIN & PINE NUT PESTO

Ingredients
- 8 thin slices (best quality) bread
- 8 ounces Alder Smoked Salmon
- 2 ripe mangos, peeled & sliced thin
- juice of 1 lime
- ½ cup (purchased) basil pesto
- ¼ cup toasted pine nuts, chopped
- 2 tablespoons (moist) golden raisins
- 1 teablespoon extra virgin olive oil
- ½ teaspoon creamed horseradish
- 1 cup fresh watercress
Instructions
- Divide salmon between 4 slices of bread.
- Sprinkle mango with lime juice ans place on salmon.
- In a small bowl, stir together the basil pesto, pine nuts, raisins, olive oil and horseradish.
- Spread on the remaining 4 bread slices and top with watercress.
- Put sandwiches together, trim off all crust then cut into triangles.
- Yield: 8 pieces
