Smoked Salmon Scramble

Ingredients
- 3 eggs
- 1 teaspoon tarragon
- 2 oz. traditional Olympic Peninsula Alder Smoked Salmon
- 1 tablespoon capers
- Non-stick spray
- Optional: parmesan cheese, scallions
Instructions
- Beat the three eggs with tarragon.
- Separate salmon.
- Spray pan with non-stick spray and heat on medium.
- Add eggs, salmon, and capers.
- Cook as you would scrambled eggs.
- If desired Garnish with shredded parmesan cheese or sliced scallions.
- Serves two, or one really hungry person.
